Potato Pancakes (Latkes)

Ingredients:

– 4 large potatoes, peeled and grated
– 1 small onion, grated
– 2 large eggs
– 1/4 cup all-purpose flour
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp paprika (optional)
– 1 cup shredded cheese (optional)
– Vegetable oil, for frying

Instructions:

1. **Prepare the ingredients:**
– Grate the potatoes and onion using a box grater or food processor. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much excess liquid as possible.
– In a large bowl, combine the grated potatoes and onion. Add the eggs, flour, salt, pepper, and paprika (if using). Mix well to combine. If you want to add cheese, mix it in at this point.

2. **Form the pancakes:**
– Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
– Scoop about 1/4 cup of the potato mixture into your hand and flatten it into a pancake shape. Carefully place it into the hot oil. Repeat with the remaining potato mixture, making sure not to overcrowd the skillet.

3. **Fry the pancakes:**
– Fry the potato pancakes for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to flip them carefully.
– Once fried, transfer the pancakes to a paper towel-lined plate to drain excess oil.

4. **Serve:**
– Serve the potato pancakes warm with your favorite toppings, such as sour cream, applesauce, or a sprinkle of additional cheese.
