Pistachio Gelato: Crying Dreams!

Instructions:

Preparation of pistachios: Grind the pistachios in a food processor with 1/4 sugar until they become a fine paste. ๐ŸŒŸ๐Ÿฅœ

Heat the milk and cream: Mix whole milk and cream in a pan. Heat over medium heat until it starts to sizzle. 7

Beat the yolks: In a separate bowl, beat the egg yolks, 1/2 cup sugar and a pinch of salt until the mixture thickens and thickens. ๐Ÿฅ„๐Ÿณ
Beat the eggs: Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from spreading. 7
