No-Bake Peach or Apricot Cheesecake

 

 

 

Ingredients:

**For the Crust:**
– 2 cups graham cracker crumbs
– 1/2 cup unsalted butter, melted

**For the Filling:**
– 3 cups cream cheese, softened
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 cup heavy cream
– 1 cup diced canned peaches or apricots (drained)
– 2 tablespoons unflavored gelatin
– 1/4 cup cold water

**For the Topping:**
– Sliced canned peaches or apricots (drained)
– 1/4 cup peach or apricot jam (optional)
– 2 tablespoons chopped nuts (optional)

Instructions:

 

1. **Prepare the Crust:**
– In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
– Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
– Refrigerate the crust while preparing the filling.

2. **Prepare the Filling:**
– In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom.
– Heat the bloomed gelatin in the microwave for about 10-15 seconds until completely dissolved. Let it cool slightly.
– In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
– Gradually add the dissolved gelatin and continue to beat until well combined.
– In a separate bowl, whip the heavy cream until stiff peaks form.
– Gently fold the whipped cream and diced peaches or apricots into the cream cheese mixture until well combined.

3. **Assemble the Cheesecake:**
– Pour the filling over the prepared crust, spreading it evenly.
– Refrigerate the cheesecake for at least 4 hours, or until set.

4. **Prepare the Topping:**
– Arrange the sliced peaches or apricots on top of the cheesecake.
– If using jam, warm it slightly and brush over the fruit to give a glossy finish.
– Sprinkle with chopped nuts if desired.

5. **Serve:**
– Carefully remove the sides of the springform pan.
– Slice and serve the cheesecake chilled.
