Mini Tomato Cheesy Bites Recipe

 

 

 

Ingredients:

– 4 large potatoes, peeled and grated
– 2 eggs, beaten
– 1/2 cup grated Parmesan cheese
– 1/2 cup shredded mozzarella cheese
– 1/2 cup shredded cheddar cheese
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and pepper, to taste
– 2-3 large tomatoes, sliced
– 1/2 cup marinara sauce
– Fresh basil or parsley, chopped (for garnish)
– Additional shredded mozzarella cheese for topping
– Olive oil for frying

Instructions:

 

1. **Prepare the Potato Base:**
– In a large bowl, combine the grated potatoes, beaten eggs, grated Parmesan cheese, shredded mozzarella cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

2. **Form and Fry the Potato Patties:**
– Heat a generous amount of olive oil in a large skillet over medium heat.
– Take a small handful of the potato mixture and form it into a small patty. Repeat with the remaining mixture.
– Fry the patties in the hot oil until they are golden brown and crispy on both sides, about 3-4 minutes per side.
– Transfer the cooked patties to a paper towel-lined plate to drain any excess oil.

3. **Assemble the Cheesy Bites:**
– Preheat your oven to 375°F (190°C).
– Place the fried potato patties on a baking sheet lined with parchment paper.
– Spread a small amount of marinara sauce on top of each patty.
– Place a slice of tomato on top of the marinara sauce.
– Sprinkle additional shredded mozzarella cheese on top of each tomato slice.

4. **Bake:**
– Bake the assembled cheesy bites in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
