HOMEMADE STRAWBERRY ICE CREAM

 

 

Ingredients:
500 grams of strawberries
100 grams of sugar
240 ml of cold whipped cream or whipped cream
3 egg yolks

Preparation:
1. The first thing we have to do is clean the strawberries fresh and then cut them in half.
2. We pass the strawberries through the blender until they are completely crushed, as if it were a smoothie.
3.In a saucepan, heat a few glasses of water over medium-high heat until boiling.
4. Put the egg yolks together with the sugar in a heatproof glass bowl.
5. When the water in the pot begins to boil, reduce the heat to a minimum and place the bowl with the egg yolks on the pot.In this way we prepare the mixture in a water bath.

6. We begin to beat the yolks together with the sugar with a whisk until we see that the color changes between whitish and yellowish. This takes about 5 minutes. Remove the container and allow the mixture to come to room temperature.
7.Meanwhile, we whip the cream in another bowl. To do this we pour in the whipped cream, which must be very cold.

8. Beat with a whisk for 3-4 minutes until peaks form.
9. We add the whipped cream little by little to the container with the yolks and, with the help of a spatula, stir with gentle, enveloping movements until everything is perfectly integrated.10. Now we have the base of our ice cream, which is perfect for making homemade fruit ice cream, in this case strawberry.

11. Add the reserved strawberry smoothie and mix gently, using gentle movements, until a homogeneous mass is obtained.
12.Now all you have to do is pour this mixture into a plastic or glass Tupperware, spread it well and store it in the freezer for at least 4 hours. I prefer to leave it overnight so it compacts much better.
13. Take the homemade strawberry ice cream out of the freezer 5 minutes before serving and let it cool slightly so that our ice cream balls can be formed more easily. Enjoy
