Hearty Vegetable and Beef Soup




– 1 lb ground beef
– 1 large onion, chopped
– 3 cloves garlic, minced
– 3 large carrots, diced
– 2 celery stalks, diced
– 1 cup frozen peas
– 1 cup frozen corn
– 1 can (14.5 oz) diced tomatoes
– 6 cups beef broth
– 2 cups water
– 2 large potatoes, diced
– 2 tsp dried basil
– 1 tsp dried oregano
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)



1. **Cook the Beef:**
– In a large pot, cook the ground beef over medium heat until it is browned. Drain the excess fat.

2. **Add Aromatics:**
– Add the chopped onion and minced garlic to the pot with the beef. Cook until the onion becomes translucent.

3. **Add Vegetables:**
– Stir in the diced carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.

4. **Add Liquids and Seasoning:**
– Pour in the beef broth, water, and diced tomatoes (with their juice). Add the dried basil, dried oregano, salt, and pepper.

5. **Simmer:**
– Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 30 minutes, or until the vegetables are tender.


6. **Add Frozen Vegetables:**
– Stir in the frozen peas and corn. Cook for an additional 5-10 minutes until the frozen vegetables are heated through.

7. **Serve:**
– Ladle the soup into bowls, garnish with fresh chopped parsley, and serve hot.
