 STEP 1: PREPARE  GARLIC BUTTER

  1. In a small bowl Mix the soft butter, chopped garlic, chopped parsley, lemon juice, salt and pepper. Mix until well combined.2. Pour the mixture onto a piece of plastic or parchment paper and shape it into a log. Refrigerate until firm, about 30 minutes. This makes the chicken easier to cut and melt.

 STEP 2: PREPARE CHICKEN

1.If the chicken breasts are too thick, pound them with a meat mallet or rolling pin to an even thickness. This helps them cook evenly.

  1. Brush each chicken breast with olive oil and season generously with salt and pepper.

 STEP 3: PREHEAT  GRILL

1.Preheat your grill to medium-high heat. You will need a hot grill to sear the chicken and save the drippings.

 STEP 4: GRILLED CHICKEN

  1. Place the chicken breasts on the grill and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C). The exact cooking time depends on the thickness of the chicken.2. Avoid turning the chicken too frequently. Let it cook undisturbed for the best grill marks.

 STEP 5: ADD  GARLIC BUTTER

  1. During the last few minutes of roasting, place a slice of cold garlic butter on each chicken breast.Let it  melt and drizzle the chicken with aromatic butter.

 STEP 6: REST AND SERVE

  1. After cooking, place the chicken breasts on a plate and cover loosely with aluminum foil. Let them rest for 5 minutes. This allows the juice to distribute throughout the meat and ensures a juicy, tender chicken breast.2. Serve the grilled chicken breasts with additional slices of garlic butter on the side. The butter will melt with the heat of the chicken, adding more flavor.
