Fried fish with cherry tomatoes and olives:

 

Ingredients:

– 1 fish fillet (such as cod, halibut or salmon)
– 1 tablespoon cognac
– 2 cups cherry tomatoes, portion
– 1/4 olive, pressed
– 3 cloves of garlic, minced
– 2 sprigs of fresh parsley, chopped
– 2 sprigs of fresh thyme
– 1/2 teaspoon of red pepper flakes
– 1 teaspoon of Cajun spices
– 1 teaspoon of Italian spices
– 1 teaspoon of ground red pepper
– 1 . Grease the baking tray with cooking oil or line it with baking paper.

2. Season the fish on both sides with herbs, salt and pepper. Put aside.

3. In a mixing bowl, mix two cherry tomatoes, diced tomatoes, chopped garlic, chopped parsley, fresh thyme sprigs, red pepper flakes, Cajun spices, Cajun seasonings, red pepper powder, salt and black pepper. Mix tomatoes and olives well with herbs.

4. Place ripe cherry tomatoes and olives in the prepared bowl and distribute evenly.

5. Place the stuffed fish on top of the cherry tomatoes and olives in a baking dish.

6. The spot on the top of the fish is filled with bits of salty fat.

7. Pour 2 tablespoons of water into the baking dish around the stuffed fish. This helps render the oil and preserve the fish while cooking.

8. Cover the baking tray with aluminum foil and bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

9. Remove the foil from the baking dish and turn on the oven to bake. Cook the fish for another 2-3 minutes or until the top is lightly golden brown and caramelized.

10. Remove the cooked fish, cherry tomatoes and olives from the oven. Garnish with fresh parsley if desired.

11. Serve the fried fish hot with roasted cherry tomatoes and olives. Enjoy your healthy and nutritious food!
