Ingredients
Salad Ingredients:

1 pound uncooked – I love Rotini! 977
cups pepperoncini (optional, but do so)

1/2 cup red onion, chopped

1/2 cup fresh parsley, chopped

Italian salad dressing:

1 1/2 cups olive oil

1 /4 cups white vinegar (white vinegar or red wine vinegar)

1/4 cup water

2 tablespoons coarse sea salt (yes, tablespoons – see note!)

2 cloves garlic (or 1 tablespoon garlic)

1 teaspoon sugar

2 teaspoons dried thyme and dried basil

black pepper to taste

fresh herbs if desired! Sometimes I add fresh parsley, basil or chives.

Directions for use
For maximum flavor, cook the noodles in salted water according to the package instructions. Let it cool slightly and mix with a little oil to prevent sticking.

Combine sauces or mix in a bowl.

Assemble all the ingredients! I like to use about three-quarters of a dressing and save the rest of the dressing to add to my crumbles.

Store in the refrigerator for 2-3 days. I find it tastes best the day after making it.
