Ingredients:

 

– 1 lb lump crab meat or your choice of seafood
– 8 large egg roll wrappers
– 1 cup all-purpose flour
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– 1/2 teaspoon cayenne pepper (optional)
– Salt and pepper to taste
– 2 eggs, beaten
– 1 cup breadcrumbs
– Vegetable oil for frying
– Fresh parsley for garnish
– Lemon wedges for serving

1. **Prepare the Seafood Filling:**
– Ensure the crab meat is well-drained and free from any shell pieces.
– Season the crab meat with salt and pepper to taste.

2. **Assemble the Rolls:**
– Lay an egg roll wrapper on a clean, flat surface.
– Place a portion of the crab meat in the center of the wrapper.
– Fold the bottom corner over the filling, then fold in the sides and roll up tightly to enclose the filling. Seal the edges with a bit of water.
– Repeat with the remaining wrappers and filling.

3. **Prepare the Coating:**
– In a shallow dish, mix the flour with garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.
– In another shallow dish, place the beaten eggs.
– In a third shallow dish, place the breadcrumbs.

4. **Coat the Rolls:**
– Dredge each roll in the seasoned flour, shaking off any excess.
– Dip the roll into the beaten eggs, allowing any excess to drip off.
– Coat the roll in the breadcrumbs, pressing gently to adhere.

5. **Fry the Rolls:**
– Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
– Carefully add the rolls to the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.
– Use a slotted spoon to transfer the fried rolls to a paper towel-lined plate to drain any excess oil.
