Crispy Fried Potato Squares

 

Ingredients:

• 3 large potatoes, peeled and grated
• 1 cup all-purpose flour
• 1/2 cup finely chopped fresh parsley
• 1/2 cup grated Parmesan cheese
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• 2 eggs, beaten
• Vegetable oil for frying

Instructions:

1. Prepare the Potatoes:
• Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
2. Mix the Ingredients:
• In a large bowl, combine the grated potatoes, flour, chopped parsley, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well.

• Add the beaten eggs and mix until the mixture is well combined and holds together.
3. Shape the Mixture:
• On a floured surface, roll out the potato mixture to about 1/2-inch thickness.
• Cut the rolled mixture into small squares, approximately 1.5 inches on each side.
4. Heat the Oil:
• In a large skillet or deep fryer, heat the vegetable oil to 350°F (175°C).
5. Fry the Potato Squares:
• Carefully place the potato squares into the hot oil, a few at a time, making sure not to overcrowd the pan.
• Fry until golden brown and crispy, about 3-4 minutes on each side.
• Remove from the oil using a slotted spoon and drain on paper towels.
6. Serve:
• Serve hot with your favorite dipping sauce.
