Ingredients:

• 4 bone-in pork chops
• 2 cups buttermilk
• 1 cup all-purpose flour
• 1 cup cornmeal
• 2 teaspoons salt
• 1 teaspoon black pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1/2 teaspoon cayenne pepper (optional, for heat)
• Vegetable oil, for frying

Instructions:

1. Marinate the Pork Chops:
• Place the pork chops in a shallow dish and pour the buttermilk over them, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.
2. Prepare the Breading:
• In a large bowl, combine the flour, cornmeal, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
3. Bread the Pork Chops:
• Remove the pork chops from the buttermilk, allowing any excess to drip off. Dredge each chop in the flour mixture, pressing the breading onto the meat to ensure it sticks. Place the breaded chops on a wire rack and let them sit for 10-15 minutes to allow the breading to adhere better.
4. Heat the Oil:
• Pour about 1/2 inch of vegetable oil into a large skillet and heat over medium-high heat until the oil reaches 350°F (175°C). You can test the oil by dropping a small piece of breading into it; if it sizzles and floats, the oil is ready.
5. Fry the Pork Chops:
• Carefully place the breaded pork chops into the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes per side, or until the chops are golden brown and crispy. The internal temperature should reach 145°F (63°C).
6. Drain and Serve:
• Remove the pork chops from the oil and place them on a paper towel-lined plate or a wire rack to drain excess oil. Let them rest for a few minutes before serving.
