Chocolate Chip Cookie Dough Ice Cream Cake Recipe

**For the Cookie Dough Layer:**
– 1/2 cup unsalted butter, softened
– 1/2 cup brown sugar, packed
– 1/4 cup granulated sugar
– 2 tablespoons milk
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1/2 teaspoon salt
– 1 cup mini chocolate chips

**For the Brownie Layer:**
– 1 box brownie mix (plus ingredients listed on the box)

**For the Ice Cream Layer:**
– 1 quart vanilla ice cream, softened
– 1 cup mini chocolate chips

**For the Frosting:**
– 2 cups heavy whipping cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract

– Additional mini chocolate chips
– Cookie dough balls (optional)

Instructions:

 

**1. Prepare the Cookie Dough Layer:**
1. In a medium bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
2. Add the milk and vanilla extract, and mix until combined.
3. Gradually add the flour and salt, mixing until just combined.
4. Fold in the mini chocolate chips.
5. Line an 8-inch round cake pan with parchment paper and press the cookie dough evenly into the pan. Freeze for at least 1 hour.

**2. Prepare the Brownie Layer:**
1. Preheat your oven according to the brownie mix instructions.
2. Prepare the brownie batter according to the package instructions.
3. Grease an 8-inch round cake pan and pour the brownie batter into the pan.
4. Bake according to the package instructions. Allow the brownie to cool completely.

**3. Assemble the Ice Cream Layer:**
1. In a large bowl, mix the softened vanilla ice cream with the mini chocolate chips until well combined.
2. Spread the ice cream mixture evenly over the frozen cookie dough layer in the pan.
3. Place the brownie layer on top of the ice cream layer, gently pressing down.
4. Freeze the assembled cake for at least 4 hours or until firm.

**4. Prepare the Frosting:**
1. In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

1. Remove the cake from the freezer and carefully remove it from the pan.
2. Frost the cake with the whipped cream mixture.
3. Decorate the cake with additional mini chocolate chips and cookie dough balls if desired.
