Chicken Chow Mein

 

Ingredients:

1 pound boneless, skinless chicken breasts, finely chopped
2 tablespoons vegetable oil
2 cups chow mein noodles, cooked according to package directions
1 bell pepper, julienne
1 medium carrot , julienne 977 garnish

Directions:

Heat the vegetable oil in a large skillet or wok over high heat.
Add the chicken pieces, stir until brown and cook for 5-6 minutes. Remove the chicken from the pan and set aside.
In the same pan, add a little more oil if necessary and fry the garlic and onions until they soften.
Add pepper, carrot and celery to the pan. Stir fry until soft but still crisp, about 2-3 minutes.
Return the chicken to the pan. Add chow mein noodles.
Mix soy sauce, sesame oil, sugar and chicken broth in a small bowl. Pour this mixture over the noodles and vegetables in the pan.
Mix all ingredients together and cook for another 2-3 minutes, making sure the sauce is evenly distributed.
Korean chow mein, topped with fried green onions and a sprinkle of sesame seeds.
