Ingredients:

– 2 cups broccoli florets
– 2 cups cauliflower florets
– 1 cup diced carrots
– 1 cup chopped bell peppers (any color)
– 1 cup cherry tomatoes, halved
– 1 cup chopped green onions
– 2 cups shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 4 large eggs
– 1 cup milk
– 1/2 cup heavy cream
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and pepper, to taste
– 2 tablespoons olive oil

Instructions:

 

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

2. **Prepare the Vegetables:**
– In a large skillet, heat the olive oil over medium heat.
– Add the broccoli, cauliflower, carrots, and bell peppers to the skillet. Cook for 5-7 minutes, or until the vegetables are slightly tender. Season with salt and pepper to taste.

3. **Assemble the Casserole:**
– In a large mixing bowl, whisk together the eggs, milk, heavy cream, garlic powder, onion powder, salt, and pepper.
– Grease a 9×13-inch baking dish with non-stick cooking spray.
– Spread the cooked vegetables evenly in the baking dish.
– Pour the egg mixture over the vegetables.
– Sprinkle the shredded cheddar cheese, mozzarella cheese, and grated Parmesan cheese evenly over the top.
– Arrange the halved cherry tomatoes on top of the cheese layer.
– Sprinkle the chopped green onions over the top.

4. **Bake the Casserole:**
– Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set and the top is golden brown.
