Cheesy Stuffed Tortilla

 

 

 

 

Ingredients

– 4 large tortillas
– 3 large potatoes, peeled and diced
– 2 tablespoons butter
– 1/2 cup milk
– 1 cup shredded cheese (mozzarella, cheddar, or a mix)
– 1/2 cup fresh spinach, chopped
– 1/4 cup fresh parsley, chopped
– 1 teaspoon garlic powder
– Salt and pepper to taste
– Olive oil for brushing

1. **Prepare the Potatoes:**
– Place the diced potatoes in a pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
– Drain the potatoes and return them to the pot. Add the butter and milk, and mash until smooth. Season with salt, pepper, and garlic powder. Stir in the chopped spinach and parsley.

2. **Assemble the Tortillas:**
– Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
– Place one tortilla on the prepared baking sheet. Spread a layer of the mashed potato mixture evenly over the tortilla. Sprinkle a generous amount of shredded cheese on top.
– Place another tortilla on top to cover the filling. Brush the top of the tortilla with a little olive oil.
– Repeat the process if you are making multiple layers or using more tortillas.

3. **Bake the Tortillas:**
– Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the top is golden and the cheese is melted and bubbly.

4. **Serve:**
– Remove the cheesy stuffed tortilla from the oven and let it cool slightly. Cut into wedges and serve warm.
