Cheesy Baked Queso Dip

 

 

 

Ingredients

– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 can (10 ounces) diced tomatoes with green chilies, drained
– 1 can (4 ounces) chopped green chilies, drained
– 1 can (15 ounces) black beans, drained and rinsed
– 1 teaspoon ground cumin
– 1/2 teaspoon chili powder
– Salt and pepper to taste
– 2 cups shredded sharp cheddar cheese
– 2 cups shredded Monterey Jack cheese
– 1/2 cup heavy cream
– 1/4 cup chopped fresh cilantro (optional)
– Tortilla chips for serving

Instructions

1. Preheat the oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
3. Stir in the diced tomatoes with green chilies, chopped green chilies, black beans, ground cumin, chili powder, salt, and pepper. Cook for about 3-4 minutes until the mixture is well combined and heated through.
4. In a large bowl, combine the shredded cheddar cheese, shredded Monterey Jack cheese, and heavy cream. Mix until the cheeses are evenly coated with the cream.
5. Transfer the tomato and bean mixture into a baking dish. Sprinkle the cheese mixture evenly over the top.
6. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
7. Optional: Garnish with chopped fresh cilantro.
8. Serve the cheesy dip hot with tortilla chips for dipping.
