Cheesy Bacon and Potato Casserole

 

 

Ingredients:

– 4 cups potatoes, peeled and cubed (or use frozen diced hash browns)
– 1 lb (450g) bacon, cooked and crumbled
– 2 cups shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup sour cream
– 1 cup milk
– 1/2 cup mayonnaise
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon dried parsley
– 1 teaspoon dried oregano

Instructions:

 

1. **Prepare the Potatoes:**
1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. If using fresh potatoes, place them in a large pot of salted water. Bring to a boil and cook until just tender, about 10 minutes. Drain and set aside.

2. **Prepare the Bacon:**
1. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon.

3. **Make the Sauce:**
1. In a large bowl, mix together the sour cream, milk, mayonnaise, chopped onion, minced garlic, salt, black pepper, dried parsley, and dried oregano.

4. **Assemble the Casserole:**
1. Add the cooked potatoes (or frozen hash browns) to the bowl with the sauce and mix well to coat.
2. Spread half of the potato mixture into the prepared baking dish.
3. Sprinkle half of the crumbled bacon over the potatoes.
4. Sprinkle half of the shredded cheddar and mozzarella cheeses over the bacon.
5. Repeat the layers with the remaining potato mixture, bacon, and cheeses.

5. **Bake:**
1. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
2. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the top is golden brown.

6. **Serve:**
1. Let the casserole cool for a few minutes before serving.
2. Garnish with additional dried parsley if desired.
