Ingredients:

– 3 ½ cups all-purpose flour
– 2 ¼ tsp active dry yeast
– 1 cup warm milk (110°F)
– 2 tbsp sugar
– 1 tsp salt
– 2 tbsp butter, melted
– 1 large egg
– 1 ½ cups shredded mozzarella cheese
– 1 cup shredded cheddar cheese
– 1 tbsp olive oil
– 1 tsp garlic powder
– 1 tsp dried Italian herbs (optional)
– Extra melted butter for brushing
– Salt and pepper to taste

Instructions:

 

1. **Activate the Yeast**: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

2. **Prepare the Dough**: In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, melted butter, and egg. Mix until a dough forms.

3. **Knead the Dough**: Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

4. **First Rise**: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

5. **Preheat Oven**: Preheat your oven to 375°F (190°C).

6. **Prepare the Filling**: In a bowl, mix the shredded mozzarella and cheddar cheeses.

7. **Shape the Rolls**: Punch down the risen dough and divide it into 12 equal pieces. Flatten each piece into a small circle, place about 2 tbsp of the cheese mixture in the center, and then wrap the dough around the cheese, pinching to seal and forming a ball. Place the filled rolls seam-side down on a baking sheet lined with parchment paper.

8. **Second Rise**: Cover the rolls loosely with a cloth and let them rise for another 15-20 minutes.

9. **Prepare the Topping**: In a small bowl, mix olive oil, garlic powder, and Italian herbs.

10. **Top and Bake**: Brush the rolls with the olive oil mixture, sprinkle with extra cheese, salt, and pepper. Bake in the preheated oven for 15-20 minutes or until golden brown and the cheese is melted.

11. **Finishing Touches**: Once out of the oven, brush the rolls with melted butter and let them cool slightly before serving.
