“Arabian Meat Pies.”

 

 

 

 Ingredients:

**For the Dough:**
– 3 cups all-purpose flour
– 1 tablespoon sugar
– 1 teaspoon salt
– 1 tablespoon instant yeast
– 1/4 cup olive oil
– 1 cup warm water

**For the Filling:**
– 1 pound ground beef or lamb
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1/2 cup chopped parsley
– 1 teaspoon ground allspice
– 1/2 teaspoon ground cinnamon
– Salt and pepper to taste
– 2 tablespoons olive oil

 

 Instructions:

 

**1. Prepare the Dough:**
1. In a large bowl, mix the flour, sugar, salt, and instant yeast.
2. Add the olive oil and warm water to the dry ingredients. Mix until the dough comes together.
3. Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

**2. Prepare the Filling:**
1. In a large skillet, heat the olive oil over medium heat.
2. Add the chopped onions and cook until they become soft and translucent.
3. Add the minced garlic and cook for another minute.
4. Add the ground beef or lamb to the skillet, breaking it up with a spoon as it cooks.
5. Stir in the allspice, cinnamon, salt, and pepper. Cook until the meat is browned and cooked through.
6. Remove the skillet from heat and stir in the chopped parsley. Let the filling cool slightly.

**3. Assemble the Pastries:**
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Punch down the risen dough and divide it into small balls (about the size of a golf ball).
3. Roll out each ball on a lightly floured surface into a small circle.
4. Place a spoonful of the meat filling in the center of each circle.
5. Fold the edges of the dough over the filling to create a boat shape, pinching the edges to seal the filling inside.
6. Place the assembled pastries on the prepared baking sheet.

**4. Bake the Pastries:**
1. Bake the pastries in the preheated oven for about 20-25 minutes or until they are golden brown.
2. Remove from the oven and let them cool slightly before serving.
